Baked V.I.P. Ham & Pineapples
 
1  Chisesi's V.I.P. ham
1 - 15 oz pineapples slices & juice
1/4 cp lite brown sugar
1 cp honey
1 sm jar maraschino cherries
1 sm container whole cloves
toothpics
 
Place ham in roasting pan cover with foil
bake 325* for 30 min per lb or
140* on meat thermometer
drain pineapples & put aside reserving juice
take juice, brown sugar & honey in sauce pan
cook on low heat till sugar is dissolved
stir occasionally
remove ham when ready
score in diamond pattern
brush pineappple sauce on ham
arrange pineapples & cherries                   securing with toothpics
stud with cloves
brush sauce on ham again
bake 30 mins in oven
take out let cool & serve
 
 
 
 
   
 
 
   
 
 V.I.P. Ham Po-Boy
 
3 oz  Chisesi's V.I.P. ham
6" french bread
mayo
shredded lettuce
sliced tomato
slice pickles
slice cheese if desired
 
Take french bread place deli sliced ham on bread
put on desired amount of mayo
add lettuce, tomatoe & pickles
put top of bread on and enjoy!
 
 
 

 

New Orleans Style Red Beans & Rice

 

4 cps dry red beans soaked overnight

2 quarts water

1 Chisesi's smoked ham shank

1 1lb Chisesi's seasoning ham

1 1lb Chisesi's smoked sausage or green onion

1 cp onion

1/4 cp green onions

3 bay leaves

2 tbsp creole seasonings  

1 tbsp hot sauce

1 tbsp minced garlic

salt to taste

2 pinches of baking soda

 

Soak dry red beans over night

put beans in pot with 4 quarts of water

start boiling

add ham shank

brown onions, sausage & seasoned ham

add onions, meats & all other ingredients

excluding salt & baking soda

cook for 2 hrs

when beans start to tenderize

start mashing beans

when beans are completely tender remove shank

and mash mash mash till you have 

desired consistency

add salt & baking soda.

serve over rice. 

 

 

 

 

Sausage Po-Boy

 

4 oz Chisesi's smoked or green onion sausage

6" french bread

mustard

  

Brown sausage in a fry pan

put mustard on bread

put sauage in center

put top of bread on and enjoy!
